Gut essen!

I haven't posted in awhile because I have been busy subbing which I am happy about! I have been getting called in a lot to sub and the teachers have been getting to know me at a few of the schools in the area so that is really great! Yay!

This weekend was nice and relaxing we had some friends over for dinner and I made german food! Yum! We watched Transformers The Dark of the Moon, it was a pretty good movie but I think the 1st one was the best.

The spaetzle was already made noodles from Aldi! It was very good with Swiss cheese and browned onions on top! Yum! I will be buying this again!
And for dessert a perfert duo for lower cal. brownies with some good nutrition too! :)
What an amazing idea! These really taste good together and you don't add anything else just cake mix and pumpkin and mix together!

Each good size muffin is only 181 calories! :) and tastes like pumpkin brownies! I want to try this with yellow cake or spice cake next!

Last weekend was the PSU vs. Perdue game! It was a great weekend a bit cold and windy but nothing we couldn't handle for tailgating! :) We also went to see the homecoming parade! and PSU won! :)

after the parade we went to dinner, I forgot to take a picture of my food...I was to hungry so I just wanted to eat! but I had the best beer ever...Creme Brulee Beer! It was crazy how much it tasted like creme brulee! SO GOOD!

Butternut Squash Season!




Hey everyone! Well it has been a pretty same ole same ole sort of week. I am still waiting to hear back from the substitute office so I can get started with subbing. I called today twice...I talking to someone who said they were going to input me into the system...then I called back and left a voice mail, because I didn't hear back from them. Maybe it just takes awhile to get on the sub database...I have no idea.

Justin and I went hiking/walking every day of last weekend, since it was a long one and he had Monday off! Saturday was the Botanic Gardens, Sunday was The Core Aboredum, and Monday was Cooper's Rock State Forrest, we hiked several different trails. It was great.

I have been looking around for workout classes in the area and I found a great yoga studio called BlissBlissBliss. I think I am going to check it out and maybe sign up for some classes. I have also looked into some Zumba classes in the area, they are not too far away and I have a flyer for a complimentary class! So I will definitely go!

I have been enjoying some of the yummy foods that we bought at the farmer's market. I did however forget to photograph everything. Yesterday I made a really good sauteed kale recipe, and tonight I made Garlicky Baked Butternut Squash! It turned out amazing! and this was yet another vegtable that my husband "said" he has never had before. And he loved it too. I have always had butternut squash steamed and I really liked it that way when I was little but now I love baking it. It is a little bit more work because you have to peel the squash and the chop it in to small pieces, but this recipe is so worth it and you can find it here: All Recipes: Garlicky Butternut Squash.
The only thing I did not have is the parsley so I added a bit of dried rosemary instead, which was a great choice! I probably prefer it over the parsley.

I will definitely be making this again and soon!

That is Israeli Couscous blend from TJ's with..yes, it is a hot dog, sometimes you just get the craving for a hot dog. Not to mention it was the only dinner meat we had in the house...:)

Hot Pumpkin Oatmeal

with chia, a few chocolate chips, coconut, and toasted walnuts, and of course pumpkin spice!

Farmer's Market Olive Rosemary Bread, which is addictive I think with Farmstead spreadable cheese. And a Pomegranate Kiwi Salad!


And that was not enough for lunch so later I had some vanilla yogurt with TJ's Fig Butter (YUM and new fave) and more Pomegranate seeds!


This weekend we are headed to PSU for the PSU vs. Perdue game! Excited to share good times, good food, and good drinks with friends! I will have lots of pictures to share! Better go charge my camera batteries.

Weekend Delight

We had a wonderful weekend with my parents back in Maryland. It was great to see them again and get to spend some quality time. Friday night Justin and I got in too late to have dinner around 8:30 pm, so we stopped on our way at the Hagerstown Outlets, we got a slice of pizza at the food court and the went to the Underarmour store! They had some great deals, Justin got 2 shirts and I got 3! I am going to wear one tomorrow for my jogging! We got home and showed my parents the wedding photos on the big screen TV. I was pretty cool to see them so big! Then it was bed time.

Saturday morning we got up and my Mom made us cheesy omelets with asiago rolls from the bakery! I didn't get to take any pictures though because my camera died and I forgot to bring the charger...fail. We lounged around for awhile and then got dressed and went to Bloomingdale's to complete our registry for our china! WE had a 20% off coupon and we were going to get maybe 3 more sets of our china pattern. (It is Alana by Waterford, so elegant) But it turned out if we signed up for a Bloomies card then we would get an extra 20% off on top of the other 20% and have free shipping! So we just went ahead and got the rest of our china! It was a really great deal. I cannot wait to use it!

After Bloomies and a few other stores we went to P.F. Chang's for lunch! I love their lettuce wraps. This is when I wished my camera had not died so I could have taken pictures. We got the chicken lettuce wraps to share and Mongolian beef and crispy honey shrimp to share for our entrees. For dessert the banana spring rolls with pinapple coconut ice cream! So Amazing!

We went to Trader Joe's to pick up a few things to bring back to WV, because we dont have one here. :(
Then back home to watch the PSU vs. Alabama game. PSU was doing great in the very beginning and then it was a tough game from there, needless to say PSU lost :( boo.

It was still a great weekend! Today we went to church then we took my parents to an amazing sushi place called Rolls n' Rice for lunch/dinner! After that we packed up the car and it was time to come back home. Now, I am relaxing, posting this entry, and enjoying a Blue Moon Harvest Pumpkin Ale! Hopefully pictures tomorrow, I need to charge my camera!
