Butternut Squash Season!




Hey everyone! Well it has been a pretty same ole same ole sort of week. I am still waiting to hear back from the substitute office so I can get started with subbing. I called today twice...I talking to someone who said they were going to input me into the system...then I called back and left a voice mail, because I didn't hear back from them. Maybe it just takes awhile to get on the sub database...I have no idea.

Justin and I went hiking/walking every day of last weekend, since it was a long one and he had Monday off! Saturday was the Botanic Gardens, Sunday was The Core Aboredum, and Monday was Cooper's Rock State Forrest, we hiked several different trails. It was great.

I have been looking around for workout classes in the area and I found a great yoga studio called BlissBlissBliss. I think I am going to check it out and maybe sign up for some classes. I have also looked into some Zumba classes in the area, they are not too far away and I have a flyer for a complimentary class! So I will definitely go!

I have been enjoying some of the yummy foods that we bought at the farmer's market. I did however forget to photograph everything. Yesterday I made a really good sauteed kale recipe, and tonight I made Garlicky Baked Butternut Squash! It turned out amazing! and this was yet another vegtable that my husband "said" he has never had before. And he loved it too. I have always had butternut squash steamed and I really liked it that way when I was little but now I love baking it. It is a little bit more work because you have to peel the squash and the chop it in to small pieces, but this recipe is so worth it and you can find it here: All Recipes: Garlicky Butternut Squash.
The only thing I did not have is the parsley so I added a bit of dried rosemary instead, which was a great choice! I probably prefer it over the parsley.

I will definitely be making this again and soon!

That is Israeli Couscous blend from TJ's with..yes, it is a hot dog, sometimes you just get the craving for a hot dog. Not to mention it was the only dinner meat we had in the house...:)

Hot Pumpkin Oatmeal

with chia, a few chocolate chips, coconut, and toasted walnuts, and of course pumpkin spice!

Farmer's Market Olive Rosemary Bread, which is addictive I think with Farmstead spreadable cheese. And a Pomegranate Kiwi Salad!


And that was not enough for lunch so later I had some vanilla yogurt with TJ's Fig Butter (YUM and new fave) and more Pomegranate seeds!


This weekend we are headed to PSU for the PSU vs. Perdue game! Excited to share good times, good food, and good drinks with friends! I will have lots of pictures to share! Better go charge my camera batteries.

Farmers Market & WV Botanical Gardens

Happy Saturday! We didn't want to waste this beautiful day so we got up early this morning around 8:30 am to go to the local farmers market for the first time! I forgot my camera but I will bring it next tie so I can take pictures! We also got up because WVU tailgaters were already being noisy outside oh well! I am so glad we went and I know we will be going back every Saturday we can until the winter!

Here is all the yummy food we got! All for approx. $30. Not bad especially for super fresh farm raised food!

I finally got some local honey this guy has several beekeeping sights a 10 mile radius around the town! It is awesome and I have heard it can help a lot with allergies! It tastes very flower and clover-y, very different from generic store bought.

This bread was still warm they had baked it fresh this morning. Olive Rosemary was Justin's pick! My pick a stuff Chibatta with spinach and feta! There was only one left. Glad I grabbed it because it is delish!

Farmstead Cheese! Like a very creamy cream cheese yum! Organic kale in the bag, WV Gold apples they are pretty crisp and sweet, and butternut squash I am going to roast it!
After our trip to the market and back we decided to go check out the WV Botanical Gardens! Which is a lot closer than I thought it would be. Justin always figures out secret ways to get to destinations! I took lots of pictures! :)

New Eats!

Well since moving in with Justin after our wedding we have been loving cooking together, hiking, and just being able to be with each other longer than the weekends.

I have been job searching all week but I am starting to get some phone calls back. I had to turn one daycare down because the pay was just not enough, so I have an interview tomorrow and I really liked the school when I went to visit so we will see how it goes! Hopefully they have a full time position that is payed a little better than minimum wage, since I do have a degree and I am a certified teacher.

We got some great wedding gifts and one that we have been using a ton is our Panini press! We love it not to mention love sandwiches, I basically only like to eat sandwiches when they are toasted or at least the bread is toasted...except for PB&J of course. So I wanted to  share some meals that we have been having the last 2 weeks. I am so terrible about posting everyday. I don't know how bloggers do it, some even post more than twice a day!
This was our first meal in our apartment together!

Close up! We had chicken, asparagus grilled in the grill pan with parmesan, and tomato, basil, mozzarella with balsamic! Our favorite bread Semolina Batard and Vino!

I have more some more panini pictures we just can't get enough! I am going to look up some recipes online to make more! It is such an easy dinner or lunch too.

Spinach, Turkey, Tomato with Sun dried tomato pesto, and some laughing cow light cheese wedge (Love that cheese I am obsessed!) all of this on and Everthing BagelThin. Bagel thins are great I prefer them over regular sandwich bread.

with a Sierra Nevada Tumbler, which I believe is their fall seasonal...or one of them. A bit early for fall beer but it was very tasty!


That is all for now! I will have to blog about my interview and share some pictures of tonight's dinner, I am planning Burrito night! It should be yummy.
