Catch-up!

I haven't posted in a while. This weekend I had friends come to visit and we had a great time eventhough it was pretty awful rainy and cold weather. I have been getting over being sick too for a little while it was pretty bad but I am almost completely back to normal! yay!

I have been making some yummy things but I keep forgetting to blog about them ahh! Sometimes I annoy myself. I have pictures from the past few days so some yummy food and stuff, and then some of the really good stuff I forget to photograph, but I guess I can still blog about it.

Last time I posted was Monday so I have Tuesday nights dinner to share! It was definitly a pasta night. I wasn't feeling great at all on Tuesday so Justin made most of our dinner. I help cut some veggies.

Justin sauteed red and orange bell peppers til they had a bit of blacked edges. He added that to the (Classico) vodka sauce and it added so much flavor.

I made our side salad and cut up some fresh mozzarella on mine. It was very tasty.

Wednesday morning I wasn't feeling much like making anything that took a very long time for breakfast, and I picked up this delicious oatmeal bread from the bakery it was a manager special and was so good with some Bummbel and Brown and honey. Yum.

Lunch was some left over noodles and an idea to recreate the Pasta Fresca from Noodles & Company. It was pretty good, I just couldn't figure out what was missing. I didn't add the white wine so maybe it was that...I don't know.

It was a yummy and simple leftover noodle lunch.
Next day is Thursday! I got up and decided to take my first attempt on pumpkin oatmeal since I got a bunch of canned pumpkin at Walmart. Finally. I was like man why don't they have any canned pumpkin!
It didn't turn out to taste super great because I didn't have any pumpkin pie spice. I just had cinnamon, but I love these marshmallows they are spiced pumpkin flavored!

It was a pretty good first attempt I am sure I will have this again soon and now I have the spices I need!


This breakfast contained...
1/3 cup oats
1 banana
1 tsp chia seeds
1/2 cup canned pumpkin
cinnamon, vanilla to taste.
Toppings: Coconut, a few chocolate chips, spoonful of cinnamon raisin swirl pb, and flavored marshmallows!
But it was definitely missing the pumpkin pie spice that really makes it good! Oh well next time!


Now for this weekend! My lovely friends Jen and Michele came to visit! We met in college and were all roomies and when we get together have a blast! I love them! They had a long drive from Philly to visit. I had not seen them since the wedding and didn't get to hangout very much then. So glad you could leave the wonderful men in your life for a weekend to come visit! (hope they didn't mind too much, I bet they missed you!)

I cooked Chicken Parm for the girls and hubby Friday night, we stayed in and watched the movie Bridesmaids, which was hilarious. It was a rainy evening like every other day this weekend!

We had Cline Zinfandel with out lovely Italian meal! ;)

It was a great evening for curling up on the couch with a good movie! Saturday morning we took it easy and had a late breakfast and since it was pouring all day we decided that going shopiing was the plan. We really wanted to go up to Cooper's Rock but in the pouring rain that didn't seem like the greatest plan.

That night we went to Morgantown Brewing Company for dinner! I love their homemade ranch and their micro brews are pretty great! I took some pictures right when we got to the restaurant but not with our food or drinks. Boo...I always forget, plus I am hungry and want to eat...that's probably why! haha. I will have to get Justin to remind me.

Deciding what to eat...took awhile also because I was goofing around taking pictures and not looking at my menu :)
Thanks for coming to visit us girls! We had a great time! Hope you come back soon! Now it is time for me to get ready for bed! Goodnight! I will try to be better about posting more often and taking pictures. :)

  1. I loved hearing about your weekend. All your yummy food pics and commentary makes me want to eat healthier. So glad your friends came AND that you are feeling better!
